Virgin olive oil foam
For the cold virgin olive oil foam
- 200 g extra virgin olive oil
- 16 g Glice
- 1 1⁄2 litre iSi siphon
- 2 loads of N2O
- Combine the oil with Glice in a saucepan.
- Heat to 65 °C so that the Glice dissolves.
- Mix well in with a spatula.
- Put the liquid oil with Glice in the siphon.
- Close and load with the gas. .
- Keep at room temperature.
