Virgin olive oil foam

For the cold virgin olive oil foam

  • 200 g extra virgin olive oil
  •  16 g Glice

Others

  • 1 1⁄2 litre iSi siphon
  • 2 loads of N2O
  1. Combine the oil with Glice in a saucepan.
  2.  Heat to 65 °C so that the Glice dissolves.
  3. Mix well in with a spatula.
  4. Put the liquid oil with Glice in the siphon.
  5. Close and load with the gas. .
  6.  Keep at room temperature.
